The course is based on the study of the catering industry and helps to prepare students for a career in this sector.  It provides a basic understanding of the beverage industry and the full structure of the catering industry.  This course covers the following areas:

  • Health & Safety
  • Food Preparation
  • Food Service
  • Diet & Health
  • Food Presentation

It is a tiered examination:

Foundation        -             G – C

Higher               -             D – A*

Assessment is by:

  • A theory paper at the end of the course          -             40%
  • Two practical assessments                           -             40%
  • Either a record of work experience                 -             20%
  • Or a coursework project                                -             20%
